Carp appetizer as in Ibăneasa
Ibăneasa among Știubeni and Negreni – several boyar estates attested by Alexandru cel Bun and Stefan cel Mare followed by Putna monastery patrimony in the property of some old boyar families. These localities include, even from the attesting time, some ponds organised in the current fish farm called Ibăneasa. Its main activity is raising the carp and other fish species, recreative fishing and rural tourism.
The fish farm that has a water surface of almost 115 Ha is placed in the protected area by Natura 2000 – aqua faunistic area of European interest, the carp being raised in extensive system and feeding only with cereals based on own recipes. The carp has no fat and is sweet. The carp appetizer with vegetables is a tasty ragout that can be served as appetizer or even as main course. The recipe is taken from the elders that know it from the boyar courts where the fish was extremely appreciated and consumed.
Ingredients: natural feeding carp (50%), kapia peppers, onion, carrots, sunflower oil, salt, piper, bay.
